Ingredients:
1 medium salad onion - finely sliced
1 x 400g can white beans - drained and chilled
2 handfulls rocket leaves - rinsed and drained
1/2 cup each sweet basil and Italian parsley leaves
Dressing
1/4 cup olive oil
1 tbs lemon juice
1 tbs red wine vinegar
1 garlic clove - crushed
pepper to taste
salt (optional) to taste
pinch of sugar

Instructions:
Whisk together dressing ingredients and chill.
Gently toss beans, fresh herbs and onion together in a bowl.
Scatter rocket leaves onto a serving platter and top with the onion and bean mixture.
Drizzle with chilled dressing and serve immediately.
Serve with a warm cheesy frittata for a great Sunday lunch.
