Capsicum Antipasto Style

Ingredients:
4 large capsicums, cut in half lengthways; remove seed and core. Place in a single layer, cut side down under grill. Grill for 5 minutes or until skin blisters and becomes black. Pull away skin and slice capsicum into thin strips.
1/2 cup Italian dressing.
2 tablespoons chopped fresh basil.

Capsicum Antipasto Style

Instructions:
Combine capsicum, Italian dressing in a bowl and refrigerate for several hours. Serve with crusty bread, lean pastrami or ham and cheese.

Another Fresh Idea
Vegetable kebabs are great on the barbecue or under the griller. Cut capsicum and onion into squares and spear on a bamboo stick, alternating with mushrooms and cherry tomatoes. Brush with oil flavoured with garlic and a few basil leaves, and cook for about 4 minutes on each side. Kids love them.

Handy Hints
Strips of capsicum add flavour to beans, broccoli, cabbage or cauliflower when cooking or steaming.
A quick and nutritious snack: capsicum dipped in peanut butter.
Capsicum is great in casseroles, soups and stir-fry.
